紫陽花の和スイーツ

材料:
■ゼリー
水 250ml
グラニュー糖 25g
紫キャベツ(千切り) 20g
粉寒天 2g
レモン汁 小さじ1/4
レモン汁 3滴
レモン汁 1滴
■団子
白こしあん 240g
水 80ml
白玉粉 50g
上新粉 50g
■仕上げ用
水 250ml
粉寒天 2g
飾り用の葉 2枚
作り方
1. 紫キャベツを袋に入れて強くもんでおく。
2. 鍋に水、粉寒天、グラニュー糖を入れて火にかけ、よく混ぜて粉寒天を煮溶かす。沸騰したら火を止めて(1)を加え、青色になったらザルで漉す。
3. (2)を4つのバットに均等に注ぎ入れ、うち3つのバットにレモン汁をそれぞれ1滴、3滴、小さじ1/4量を加えて混ぜる。冷蔵庫に入れて約15分冷やし、固まったらナイフで格子状に切り込みを入れる。
4. 団子を作る。ボウルに白玉粉と上新粉を入れて、水を少しずつ加えながら、耳たぶ程度の硬さになるまでよくこねたら、一口大に丸めて平たくつぶす。
5. 鍋にたっぷりの湯をわかし、沸騰したら(2)をそっと入れ、10分ほどゆでる。団子が浮かんできたら氷水に取り出して冷やし、水気を切る。
6. ラップの上に白こしあんをのばし、中央に白玉を置いて、ラップを茶巾絞りにして丸める。
7. 熱湯に仕上げ用の粉寒天入れてなじませる。(6)の表面にハケで塗り、(3)を付けたら、完成!
