スンドゥブつけ麺

材料:
中華麺 100g

◼︎スンドゥブ
絹豆腐 150g
白菜キムチ 100g
豚バラ肉(3cm幅) 50g
もやし 50g
ニラ(3cm幅) 15g
にんにく(すりおろし) 小さじ1
ごま油 小さじ1
水 300ml
酒 大さじ1
鶏がらスープの素 小さじ1
みそ 小さじ2

作り方:
1.鍋にたっぷりの湯を沸かし、麺を入れて規定時間通りゆでる。ゆであがったら氷水に入れてよく洗い、水気を切ってお皿に盛る。

2. スンドゥブを作る。鍋にごま油、にんにくを入れて弱火にかけ、香りが立ったら豚バラ肉を加えて炒める。

3.肉の色が変わったら、もやし、白菜キムチを加えてさっと炒め合わせる。

4.水、酒、鶏がらスープの素を加え、沸騰したら弱火にし、豆腐をスプーンで大きめにすくって加え、さらに5分ほど煮込む。

5.みそを溶き入れ、ニラを加えてサッと煮る。

6.器にスンドゥブを盛り付けたら、完成!

Sundubu Tsukemen
Servings: 1

INGREDIENTS
100 grams thick noodles
1 tablespoon sesame oil
1 teaspoon minced garlic
50 grams sliced pork belly
50 grams bean sprouts
100 grams kimchi
300 milliliters water
1 tablespoon sake
1 teaspoon chicken stock powder
150 grams tofu
2 teaspoons red miso
15 grams chinese chives , thinly sliced

PREPARATION
In a large pot of boiling water, cook the noodles until tender. Drain the noodles through a sieve, then transfer to a large bowl of ice water and use your hands to rub the noodles together to chill and prevent them from getting soggy. Transfer to a shallow bowl and set aside.
Heat the sesame oil in a medium pan over medium heat. Add the garlic and cook, stirring occasionally, for 2 minutes, until fragrant.
Add the sliced pork belly and cook for 2 minutes, until browned.
Add the bean sprouts and kimchi and cook for 1 minute, until softened.
Add the water, sake, and chicken stock powder and stir to combine until boiling.
Add the tofu and the miso and stir to dissolve the miso.
Add the leek and cook for 1 minute, until softened a bit.
Transfer the soup to a bowl. Serve with the noodles, for dipping.

  2. Why do the Tasty Japan recipes always just say 'tofu'? There are many kinds of tofu. Just saying 'tofu' is like just saying 'meat' in an English recipe.
