天津飯

2人分
材料:
卵 3個
カニカマ(ほぐす) 3本
塩 少々
コショウ 少々
サラダ油 大さじ2

■あんかけ
水 150ml
A:砂糖 大さじ1
A:酒 大さじ1
A:しょうゆ 大さじ1
A:酢 大さじ1
A:鶏ガラスープの素 小さじ1
水溶き片栗粉 大さじ1

ご飯 400g
冷凍グリンピース 適量

作り方:
1.あんを作る。鍋に水、(A)を入れてよく混ぜ、中火にかける。沸騰したら弱火にして水溶き片栗粉を加えてとろみが付くまで混ぜる。

2.ボウルに卵を割り入れて溶きほぐし、ほぐしたカニカマ、塩、コショウを加えて混ぜる。

3.フライパンにサラダ油を入れて中火に熱し、(2)を流し入れて全体を大きくかき混ぜながら火を通す。半熟状になったら火からおろす。

4.器にご飯を盛り、(3)をのせてあんをたっぷりかけ、グリンピースを散らしたら、完成!

INGREDIENTS
150 milliliters water
1 tablespoon sugar
1 tablespoon sake
1 tablespoon soy sauce
1 tablespoon vinegar
1 teaspoon chicken stock powder
1 tablespoon water mixed with 1 tablespoon cornstarch
3 medium eggs
3 crab sticks
Kosher salt, to taste
Black pepper, to taste
2 tablespoons vegetable oil
400 grams cooked rice
Frozen English peas, for garnish

PREPARATION
In a large pan, combine the water, sugar, sake, soy sauce, vinegar, and chicken stock powder. Bring to a boil over medium heat, stirring until combined.
Add the cornstarch slurry to the boiling sauce. Stir for about 1 minute, until thickened, then remove from the heat.
In a medium bowl, beat the eggs. Add the crab sticks, season with salt and pepper, and stir to combine.
Heat the vegetable oil in a medium pan over medium heat. Pour in the egg mixture and stir gently, then cook until the bottom is set. Remove from the heat.
Slide the egg over the rice in a serving bowl. Pour the sauce over the top. Garnish with peas.

    I wonder if it'll be delicious to add shredded cabbage with the egg, or maybe as a salad side dish?

  2. Wouldn't be better if you flipped it before putting it on the rice? That way the heat from the rice can cook the egg white a little more and the yellow can slide down and coat some of the rice.

  4. Is it possible for you to make a video with vegan recipes that are still Japanese? I love Japanese food but I’m worried that by becoming vegan there aren’t many things I can still make 🙁 thank you so much!
