ハニーメープルレアチーズケーキ
6人分(18cmケーキ型)

材料:
■フィリング
クリームチーズ(室温に戻しておく) 250g
生クリーム 200ml
ヨーグルト 100g
はちみつ 80g
レモン汁 大さじ1
粉ゼラチン 10g
水 大さじ2

■メープルシロップゼリー
水 200ml
メープルシロップ 100g
粉ゼラチン 10g
水 大さじ2

■ボトム
ビスケット 100g
溶かしバター 80g

気泡緩衝材(直径18cmに切る)

作り方:
1.ボトムを作る。保存用密閉袋にビスケットを入れて、めん棒で叩いて細かく砕く。ボウルに入れて、溶かしバターを加えて混ぜる。2.クッキングシートを敷いた型の底に(1)を敷き詰め、冷蔵庫に入れて30分冷やし固める。

3.フィリングを作る。ゼラチンを水に振り入れてふやかし、600Wの電子レンジで20秒ほど温めて液状にする。

4.ボウルにクリームチーズを入れてなめらかになるまで練り混ぜる。はちみつ、ヨーグルト、レモン汁を入れて、泡立て器でなめらかになるまで混ぜ、ゼラチン液を加えてよく混ぜる。

5.別のボウルで生クリームを8分立てに泡立て、(4)に2回に分けて加え、その都度混ぜ合わせる。

6.(2)の型にフィリングを流し入れ、気泡緩衝材を乗せて、冷蔵庫に入れて30分ほど冷やし固める。

7.メーブルシロップゼリーを作る。粉ゼラチンと水大さじ2を合わせてふやかしておく。鍋にメープルシロップと水を入れて火にかけ、沸騰したら1分ほど煮立たせる。火から下ろしてゼラチンを加えて溶かし、粗熱を取る。

8.(6)が固まったら気泡緩衝材をゆっくりと剥がす。(7)を流し入れ、冷蔵庫で2時間冷やし固めたら、完成!

Honey Maple Cheesecake

INGREDIENTS

Crust
100 grams biscuit cookies
80 grams unsalted butter, melted

Filling
2 tablespoons water
10 grams gelatin
250 grams cream cheese, softened
80 grams honey
100 grams plain yogurt
1 tablespoon lemon juice
200 milliliters whipped cream

Maple Syrup Jelly
10 grams gelatin
2 tablespoons water
200 milliliters water
100 grams maple syrup

SPECIAL EQUIPMENT
Large bubble wrap, cut into an 18-centimeter diameter circle

PREPARATION
1. Make the crust: Place the biscuit cookies in a zip-top bag and crush with a rolling pin or a wooden spoon until broken down into fine crumbs.
2. Transfer the cookie crumbs to a medium bowl. Add the melted butter and mix well.
3. Press the crust in an even layer in the bottom of an 18-centimeter (7-inch) springform pan. Chill in the refrigerator for 30 minutes.
4. Make the filling: Combine 2 tablespoons of water and the gelatin and mix well. Set aside.
In a medium bowl, add the softened cream cheese and stir with a rubber spatula until smooth. Add the honey, yogurt, and lemon juice and whisk to combine, then add the gelatin mixture and whisk to incorporate.
5. Fold in the whipped cream with a rubber spatula until smooth.
Pour the filling over the chilled crust and place the bubble wrap on top. Refrigerate for 30 minutes.
6. Make the maple syrup jelly: In a microwave-safe ramekin, combine the gelatin and water. Microwave for 30 seconds, stirring halfway through. Set aside.
7. In a small pot over medium heat, combine the water and maple syrup. Bring to boil for 1 minute, then remove from the heat.
8. Add the gelatin mixture and stir to combine, then let cool for 5 minutes.
9. Remove the bubble wrap from the cheesecake and pour the maple syrup jelly on top. Refrigerate for 2 hours, until the jelly sets.
10. Release the springform, then slice and serve.
11. Enjoy!

  5. I want to remind everyone that this is a common dessert, the only special part of the recipe is the maple syrup gelatin. Anyone could have thought of that and even if they didn't it could be inspired from "someone else's" recipe. This is food we are talking about no one owns it, they might own the credit by name but who knows what if the "original" recipe was stole from someone else? It's stupid that you're getting mad at this

    deskgram has a post 10 months ago for a honey maple cheesecake as well
    maybe tasty saw the other vid and decided to make their own
    maybe they had this planned in advance and released dates coincided
    but cooking tree doesnt have a monopoly on this cake lol
    if they copied the recipe ingredients and quantities thats another thing

  7. This looks like a very common cheesecake recipe. Cream cheese, honey, lemon, yogurt, gelatin, and whipped cream are all pretty common ingredients. That's how I've been making my cheesecake for a few years now, except with lemon extract and no gelatin. The beehive design, there's 2 I found that was posted way before Cooking tree.

  8. to the people who are comparing this recipe to Cooking tree's video, I just want to say that Cooking tree's video for a similar cake is not original either, the ingredients used in both videos are very commonly used in cheesecake recipes and the beehive design has been used many times before by other cooks too, so it's not exactly an original design. I have seen several other videos of similar cakes which were uploaded before Cooking tree's so I'm sure she took some ideas from other cooks too. It's food, nowadays people take inspiration from others all the time, so it's hard to find a recipe that is completely "original" nowadays.

  11. ……………..again………My fault is trusting Tasty Tokyo Japan………I think it is gonna failing my this recipe now. I've been tried for this guys recipe before couples times. That was not failed , but totally OMG ! Really ?! that type of my opinion. Since then I didn't care for this guys, but now, here we go again !! I even bought for this recipe for 18cm spring form pan . (;O;) Amount of they show that recipe was more than enough to put 18cm pan. And also honey Jelly . ( it is not clear at all………..) My opinion is ….always comment to this guys " Please more detail or princely instructions " That's all. Well, I don't think anymore ! to making this guys recipe for future. But other Tasty or UK version are very nice . I love those, but not Japan one.
