ナポリ名物ライスコロッケ
4個分
材料:
ごはん(固めに炊いたもの)200g
バター 20g
にんにく(みじん切り)1/2片
玉ねぎ(みじん切り)1/4個
コンソメ 小さじ2
水 50ml
塩 少々
コショウ 少々
モッツァレラチーズ(角切り)50g
薄力粉 適量
溶き卵 1個分
パン粉 適量
揚げ油 適量
パルミジャーノチーズ 適量
パセリ 適量
◾︎簡単トマトソース
トマトピューレ 100g
にんにく(みじん切り)1片
砂糖 小さじ1/2
オリーブオイル 大さじ1
オレガノ 小さじ1/2
塩 適量
コショウ 適量
作り方:
1.フライパンにバターを溶かし、にんにくを中火で炒め、香りが立ったら玉ねぎを加える。飴色になるまで炒めたら、ごはんを入れて全体を混ぜ合わせる。
2.コンソメ、水を加えてさらに炒めたら、塩、コショウで味を調える。粗熱が取れるまで冷ます。
3.粗熱が取れた(2)を4等分にわけ、モッツァレラチーズを入れて丸める。
4.(3)に薄力粉、溶き卵を順につけ、最後にパン粉を全体にしっかりつけたら170℃の揚げ油できつね色になるまで揚げる。
5.簡単トマトソースを作る。耐熱容器に材料の全てを入れて混ぜ合わせ、ラップをして600wの電子レンジで1分加熱し、塩、コショウで味を調える。
6.(5)、(4)を器に盛り付け、パルミジャーノチーズ、パセリを散らしたら、完成!
Arancin Italian Rice Croquettes
Servings: 4 croquettes
INGREDIENTS
200g steamed rice
20g butter
1/2 clove garlic (minced)
1/4 onion (chopped)
2 teaspoons consomme powder
50ml water
A pinch salt n pepper
50g mozzarella cheese (diced)
Some flour
1 beaten egg
Some panko breadcrumbs
Some oil
Some parmesan cheese
Some parsley
◼︎Tomato sauce
100g tomato purée
1 clove garlic (minced)
1/2 teaspoon sugar
1 tablespoon olive oil
1/2 teaspoon oregano
Some salt n papper
PREPARATION
1. Heat butter in a pan and stir minced garlic over medium heat. Add onion and cook until caramelized. Add steamed rice.
2. Add consommé powder and water and mix. Season with salt n pepper. Remove from the heat, let it cool.
3. Divide the seasoned rice (2) into 4 parts. Shape into balls and put mozzarella cheese in the center.
4. Dredge rice balls (3) in flour, dip in beaten egg, then coat with panko breadcrumbs. Heat oil to 170°C (338°F). Deep-fry rice balls until golden.
5. To make tomato sauce, mix all ingredients in a bowl. Plastic-wrap the bowl and microwave for 1 minute at 600W. Season with salt n pepper.
6. Place rice croquettes (4) and tomato sauce (5). Add parmesan cheese and parsley on top.
7.Enjoy!

correct me if i'm wrong but isn't arancini supposed to be made with cold risotto?
I remember trying them in Sicily on 2019. They were incredible. I also had Cannoli and Sicilian pizza.
So I watched this after only being awake for less than 5 mins this morning and I thought it said Italian ICE and it looked like it could be that in the picture to me too so I was very confused for the whole video and thought this was one of those “foods that look like something but are really something else” videos … finally at the very end I realized it said Italian RICE 😂😂😂🤦🏼♀️

Guys this is NOT arancini, neither similar. This is a pathetic reinterpretation. Kinda offensive for a Sicilian person. Please do not try this thinking it's the correct recipe, it is NOT!
